    摘要:

    屠宰业发展至宋代呈现出较明显的专业化趋势。肉食品的生产、加工与销售逐渐分离,成为独立的行业。屠宰业结构产生较大变动,出现大量雇佣关系,牙人成为交易完成的重要见证人。宋代屠户群体内部收入差距逐渐扩大,但与其他行业相比,其收入水平并不算低。

    Abstract:

    The development of the slaughtering industry till the Song Dynasty gradually showed a trend of specialization.The production,processing and selling of meat food were gradually divided and developed into separate industries.The structure of slaughtering industry began to change greatly,and large-scale employment emerged,with brokers ending up witnesses to the end-point meat trade.Though there was a gradually enlarged income gap between butchers in their industry, the income level of butchers is not low compared to those in other industries.
